Low Fat Muffins
I eat one of these every day for lunch. I used to buy them, but since I retired, I can't find any as good as where I worked. This recipe is still a work in progress. Any tweaks, suggestions, etc. would be wonderful!
Preheat the oven to about 400 Grease your muffin pan 2 cups of cake flour 1/2 cup sugar substitute (using Splenda - too expensive - any ideas?) 1/2 tsp salt 1/2 tsp baking soda 4 tsp baking powder Mix in a large bowl In another bowl: 1 egg (or egg substitute) 3 tbl. butter substitute, melted 1 cup fat free yogurt 1 tsp vanilla Mix the eggs, etc. into the flour and mix. Don't mix until it's a smooth paste. It should be a bit lumpy. Bake for from 12 - 25 minutes, depending on your oven.; When you stick a toothpick in and it comes out clean, they're done. Options: I add about 1 cup unsweetened applesauce, as many blueberries as I have, and whatever other fruit I have. I'll cut up a peeled apple, a banana, add a jar of cranberry sauce or pumpkin, etc. I have a pan that makes giant, deli size muffins and get 6 from this recipe. Next time, I'm going to double it and make 12. They can be frozen. |

Here's my version of Heart Healthy Bran Muffins. It too is a work in progress!! 1 1/2 cups All Bran Cereal 1/2 cup Old Fashioned Oatmeal 1 1/2 cup Soy milk 1 1/4 cup King Arthur or other natural whole wheat flour 1 tblsp. baking powder 1/4 tsp. salt 2 heaping tsp. Powdered Stevia (from Health Food Store) or 1/4 cup Splenda Sugar Blend for Baking or 1/2 cup sugar 2 tsp. cinnamon 2 egg whites 2 tblsp. whole flax seed (from Health Food Store) 1 tblsp. Canola oil 1 cup chopped pecans or walnuts (walnuts lower blood pressure) may use ? cup of each 1 cup chopped dried fruit (I like to use dried strawberries or raisins) may also use mashed bananas 1 tsp. vanilla Combine cereal, oatmeal and milk and let stand for 2 minutes. Sift together flour, sweetener, baking powder, salt and cinnamon. Set aside. Add egg, flax seed & oil to cereal mixture. Beat well. Add flour mixture stirring until combined. Add nuts, fruit and vanilla & stir. Portion into 12 muffin cups coated with cooking spray. Bake at 400F about 20 to 22 minutes until golden brown. These muffins freeze well. |
I don't know why my fractions are not showing up correctly.
On my computer they look like question marks. The lines showing question marks should read: 1 & one half cup All Bran Cereal one half cup Oatmeal 1 & one half cup soy milk 1 & one quarter cup whole wheat flour one quarter tsp salt one quarter cup of Splenda Sugar Blend for Baking or one half cup sugar Hope this fixes it. |
Those muffins sound really good, thanks for sharing girls. Im keeping all the 4wt recipes, soon ill have a cookbook LOL :D
