Good ole pot roast
 
I have not made a pot roast in years!!!Love it, one of my favorites.. so tonight is the night. I make it the way my mom does. Put my roast in my new (to me, bought a old large aluminuim roaster at last antique show) roaster, sprinkled it with Lipton's Onion Soup Mix, cleaned carrots, placed to next to meat, added water, sprinkled carrots with sugar.
Cook for 2 hours at 350, add tators, salt and pepper, cook another hour till done.
Simple and tasty.

How does everyone else do theirs? Years ago a friend raved about my carrots, had never liked carrots, but loved mine. I told him I sprinkled with sugar and he had a fit. Would never eat them again!

What can I say? I cook'em like mom... and I love them!

So a question.
Anybody else sugar their carrots in a roast?

No, I have never sugared my carrots, but I'm sure going to next time! :D

I dust both sides of my roast in flour, salt and pepper and then put some oil in the bottom of my roasting pan (my grandma's :)). I brown both sides.

Then I throw in carrots, potatoes, and onions; add some water and I put on the lid and cook it on 250-275 for 3-4 hours (depending on the size of the roast).

When finished, I pull out meat and vegetables and thicken the liquid in the bottom of the pan for gravy.

I usually make more meat and potatoes than we can eat so the next day I cut them all into bite sized pieces and throw in a large can of V8 juice and make beef stew. It is really good! Oh, and also put any leftover gravy in too.

I haven't fixed a roast for a long time either. I just usually put everything in my slow cooker. I might have to do that soon...you ladies are making me hungry for it.

i put my in a roaster, with carrots, potato's, and a can of cream of mushroom, salt and pepper and let it cook all day, make some biscuits when i get home,, instant dinner...

My mother made the absolute best pot roast in the world, but never wrote down her recipe. I wish she had so that I could make it too.

I have never sugared my carrots when I cook them with a roast, but I'll have to try it!

When I make carrots, I usually use butter and parsley to flavor them. So good!

I add carrots, celery, potatoes, onions, ketcup, A-1 sauce and some garlic powder.
Then if I have leftover roast I make veggie beef soup. YUMMY>>>>>>>>

I don't sugar my carrots when I cook them with a roast but if I'm just cooking carrots I'll add a little bit of sugar, butter, salt and pepper. They're one of my favorite vegetables!!!!

Diana, I'm ditto on the sugared carrots.

I've made my roast a few different ways, in the crock, oven, and stovetop. Sometimes I use onion or mushroom soup and I've even made a chili roast. I boil my potatoes down separately for awhile before adding to the roast pot.

I LOVE ROAST!

Well tonight its rock cornish game hens with harvest potatoes and peas..

better get it going as its just past 7:00pm... I have to get out of this habit of eating late!~ thankfully its just me I have to worry about... if I'm lucky I will have ate and kitchen cleaned by 9:00pm.

I really admire you fixing such a yummy dinner for yourself - if I only had to cook for myself - I'd eat cereal!
