Green Beans and Chicken
This sounds good. I'm going to try it:
Green Beans with Chicken and Crumbled Feta Cheese 1 lb skinless, boneless chicken breasts (2 - 4 breasts) 1 tbsp olive oil, plus some for drizzling l lemon 6 oz. fresh green beans (1/2 cup/person) 1/2 cup fresh feta cheese, crumbled 1 tomato, chopped 1/2 avocado (optional) salt and pepper to taste Broil chicken with a dash of olive oil and lemon slices on top for 4 to 5 minutes. Turn the chicken halfway though and squeeze the lemon juice over the chicken., Cook for another 4 to 5 minutes. Drop green beans in boiling water and boil for 1 to 2 minutes. Strain, while they are still bright green and crispy. Toss green beans into bowl with 1 tbsp olive oil crumbled feta cheese and chopped tomatoes. You want the green beans to be warm so they melt the cheese slightly. Slice the avocado and add in. Cut chicken and toss in with green bean mixture. Serve and enjoy! This sounds like the kind of recipe where you can substitute and add whatever you want, like a different cheese, etc. I bet you could make it TexMex with some peppers and spicy cheese, Gayle! |
