Marzipan is a thick almond paste that can be molded into different shapes kinda' like clay. They use food coloring to color the paste.
You'll see a lot of fruit or vegetable shapes, but probably the most common are flowers to decorate cakes. Or they'll roll the marzipan out real thin and lay it on top of the cake for a smooth seemless icing and then add flowers or other decorations.
I've never made anything myself, but I've seen some pretty impressive 'sculptures' when I worked in catering.
