Not Yo Mommas Banana Puddin
Ingredients
2 bags Pepperidge Farm Chessman Cookies
6 - 8 Bananas, sliced (ripe but not over-ripe)
2 cups Milk
1 box Instant French Vanilla Pudding (5oz)
8 oz Cream Cheese, softened
14 oz Sweetened Condensed Milk
12 oz Cool Whip (thawed) or Sweetened Whipped Cream
Directions
Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and
condensed milk together and mix until smooth.
Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended.
Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.
Spicy Green Beans
Ingredients
4 slices bacon, cup into 1-inch pieces
1 onion, minced
2 pounds fresh green beans, tipped and washed
1 cup boiling water
3 tablespoons white vinegar
3 tablespoons butter
Salt
Cayenne pepper
1/2 lemon, juiced
Directions
Cook bacon in frying pan until crisp. Drain bacon and set aside, leaving drippings in skillet. Add onions to drippings and saute until tender. Add green beans to pan and saute over medium heat for 2 minutes, stirring frequently. Add boiling water to pan and cover. Cook for about 15 minutes, just until beans are tender. Add vinegar, butter, and salt and cayenne, to taste, and stir. Add back crisp bacon before serving. Garnish with a squeeze of lemon juice.
These are good for Super Bowl parties, New Years or to nibble while you are waiting for the dinner to finish
Sweet Chicken Bacon Wraps
Ingredients
1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)
1 (1-pound) package sliced bacon
2/3 cup firmly packed brown sugar
2 tablespoons chili powder
Directions
Preheat oven to 350 degrees F.
Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.
I also take jalapeno peppers, de-seed the halves and stuff them with cream cheese, wrap each half with a whole or a half strip of bacon (depending on how much the brand you buy shrinks), secure it with a toothpick and either grill or bake until crispy.
