Jam Cake
1/2 cup shortening
1 cup brown sugar
3 eggs separated
1 & 3/4 cup of flour
1/2 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 cup blackberry jam
3 Tbs. milk
3/4 cup chopped raisins
Cream shortening and sugar; add egg yolks. Beat until fluffy. Sift flour with spices. Add flour/spice mix to shortening/sugar mix, alternately with jam and milk; add raisins. Gently fold in stiffly beaten egg whites. Place in angel food pan. Bake at 375 for 1 hour and 15 minutes.
