So....you're not eathing ANY animal products? No milk, eggs, cheese? That would be really hard for me!!
I will say though, that I've been drinking the unsweetened almond milk and it's pretty good.....I do add splenda. It takes some getting used to but it has less carbs in it. I imagine if you're not concerned about the sugar the sweetened would be even better!!

Yes, I should say I'm going vegan for March. I'm trying many substitutes and I'm learning to make veggie/fruit smoothies.

No, the Almond milk is not soy. It's made from almonds. There are soy milks though but I haven't had them.

Almonds are very healthy, so that milk sounds good.
I roast a lot of my veggies. I have some fresh beets and brussel sprouts waiting to be roasted in a few minutes. They are delicious! As long as you have a couple of servings of protein every day, you should be fine. You have to supplement with a few animal amino acids.
