I'm sorry your Mom has all of these health issues! NH care is so crazy! If you aren't very wealthy, you are so out of luck! My aunt lives in a beautiful place, where you go from one phase to another, depending on your health. My uncle left her lots of money though. My stepmother also has this advantage. I will have to just wing it. I am only hoping to leave something for my daughter and her family. That shoebox idea is not half bad!
