hey ya'll i know there are a few out there that love to cook and i need recipes. my hubby is coming home from offshore tomorrow and my mil i keeping the kids. i always try to make a special night out of it with drinks and a nice dinner but i am out of recipes so please send me something to cook up for my man! thanks a bunch!

How about a couple cornish hens and my recipe I posted in another thread for Crock Pot dressing. It is so good. Then you could have some strawberries and chocolate or make an eclair cake.

I was a clutz in the kitchen but one of the first dishes I made for my husband was butter garlic shrimp and pasta. It's really easy, you just chop up some garlic, green scallions and a few tiny bits of onion and toss them with a bar of butter in a skillet. Once the butter is melted just toss your shrimp in and cook for a few minutes. I served mine over fettucine but you can use whatever pasta you like. It was really good and made him "extra happy" in a way shellfish does to some people.

For special dinners sometines I like to grill big ole porterhouse steaks and broiled or grilled shrimp with red baked potatoes. Sometimes I'll grill some Portobello mushrooms with it. Or shrimp scampi over fettucine with garlic bread and some Pinot Grigio wine.

Men do like steaks. One of my hubbys favorite meals is a big 'ole steak and homemade twice baked potatoes. I have the recipe for the potates, so if you think you might want to make those, let me know!

I like to first bake the potatoes in the microwave because it is faster. But however you wanna do it, whether it is in the oven or microwave, it doesn't really matter. But, if you do it in the microwave, cook each potato 6-8 minutes or until no longer hard in the middle when you stick a knife or fork in it. But don't cook it too long because the jacket will be more likely to tear. Then, after you bake the potatoes, cut off the top of the baked potato and scoop out the filling being very careful not to tear the jacket. In a large mixing bowl, add to the inside of the baked potatoes anything that you would eat on a loaded baked potato. I like to use LOTS of cheese, sour cream, bacon bits, a little bit of milk, salt, pepper, garlic powder, and my secret ingrediet....ranch powder...you know, the Hidden Valley ranch powder that comes in the little packets that you can make dressing or dip out of....add some of that powder to your mixture. You can also use scallions if you like those. Then, get a handmixer out and mix it all together. Taste it and if you think you need to add more of anything, then do so. Then take a spoon and load the jackets back up with the filling. Top with shredded cheddar cheese. Bake at 350 or 400 until cheese on top is melted (about 30 minutes)

Guacamole Recipe to go with "FLAUTAS"
1 Hass LARGE Avocado (if they only have small ones use 2) 1/2 a medium tomato 1/2 White Onion 1 Lemon or Lime Salt Cut your avocado in half and scoop it unto a bowl.. Grab your onion and tomato and chop unto small pieces.. Micx into your already smashed avocado bowl mix together add salt to taste and squeeze a lemon or lime unto it..taste and you might add a bit more salt... (Lemon is used to avoid browning of the avocado and it gives it a nice twist)....good eats!
