Yummy Finger Food

This is really yummy, easy to prepare, and eat....


Cool Cucumber Sandwhiches

1 baguette loaf of bread, sliced about 1/2 inch thick

1 pkg. Philly cream cheese, softened to room temp.

1 pkg. Good seasonings Italian dressing mix

dill weed - the dried type in a jar you can sprinkle

paprika - the dried type in a jar you can sprinkle

1 english cucumber - this is the seedless type

Toast bread slices in oven on a cookie sheet till lightly brown or crisp

In a bowl mix the cream cheese w/ salad dressing packet. Mix well. Slice the cucumber and set aside.

Spread cream cheese mixture on each sliced of toasted bread. Top each with a slice of cucumber. Sprinkle with dill (quite a bit of it) and a little paprika just for color.

Cover with saran wrap and refrigerate until ready to serve.

Yum! I love no-bake cookies!!! I add coconut and pecans to mine too.

I would take Spinach dip. I always get raves when I take it (actually I'm EXPECTED to take it!!)

1 pkg. Lipton Vegetable Soup Mix (or Knorr's Vegetable soup mix)
8 oz. sour cream
1 cup Mayonaise (not Miracle Whip or Salad dressing)
10 oz. frozen chopped spinach, thawed and water squeezed out
1 bunch green onions, chopped
1 can water chestnuts, drained and chopped

In a medium bowl, combine all ingredients, chill for 2 hours

Serve with crackers or, my favorite, Kings Hawaiian Bread torn into small chunks.
Or if you want to get fancy you can take the Hawaiian Bread and cut the top off and hollow it out and serve the dip inside the bread. Take what you carved out and tear into chunks and serve from a bowl. This is very good!!!!

I am going to try to make them all to bring - they are too good to choose between.

Can the cookies be made with butter or only margarine? Or will oil work? (Just thinking about ingredients we always have in the house.)

You can use butter. Any kind of stick should work.
Enjoy. It looks like you've gotten some really wonderful recipes.
I'm going to have to print them off too.

Kate.. I was going to write down the spinach receipe but I see that Diana has given it to you already that is awesome. Here is a another good spread for crackers.

ARTICHOKE DIP



8 oz. can of Artichoke hearts
1 cup of mayo
1/2 cup of grated cheese


Drain one can of artichokes and wipe them with paper towel and put on side. In a mixing bowl mix the mayo and grated cheese.

Cut artichokes hearts into 4 pieces and mash with potato masher and mix with the above in mixing bowl. Put into a glass dish and bake at 350 until golden brown . Serve hot and spread on crackers..

This is really tasty and delicious as an appetizer.

That sounds rich and yummy!

Right now I am envisioning a couple of sectioned platters - the kind you can get cheaply and leave behind - full of goodies.

I met one of the other invitees today - she's bringing spanokopita and baklava. Mmmm! (Wish I could eat!)
