We make what we call hobo pies; recipe:
On a sheet of foil spray foil with pam Add a dollup of butter in the center Cut 1 large potatoe into slices; spread out in the middle of the foil on top of the butter. Make a hamburger patty & lay it on the potatoes (season burger for taste) Put sliced onions on top of hamburger Then place sliced carrots on top of the onions The fold foil into a packet; cook 20 minutes on each side or until vegetables are done. |

My Mom does something similiar in the oven with smoked sausage. She slices it into small pieces about 1 inch thick then adds broccoli, cauliflower, onions, carrots, potatoes, with salt and pepper and a little bit of water. She wraps it in foil in a large pan and bakes it until it's done (it's takes quite a while). Then she opens it up and serves it from the pan with a salad. It's really good and it feeds quite a few.

I have a different kind of potato salad that everyone really loves once they have a taste!
You take about a pound of red potatoes, boil whole until tender. Cool in cold water. Take a good sized deep bowl and slice about a fourth of them on the bottom of the bowl. Then spread about 1/4 c. mayonaise (not salad dressing) on the potatoes. Then take a large container (16 oz) of cottage cheese and put a fourth on the mayonaise. Sprinkle lightly with seasoned salt and put chopped green onions on top of cottage cheese. Continue with layers ending with the cottage cheese on top with the season salt and onions. Let this sit in the refrigerator for a while so the flavors can blend. It sounds really unusual but I get a lot of compliments on it and the kids even like it! (I can't remember if there's 3 or 4 layers to this so you'll just see what works for you. And make sure you use the red potatoes. They have a better flavor for this.)
