Lindsey, you can fix the chicken and then refreeze it. I take it off the bone for for use in other things. I freeze it all off the bone for quick sandwiches too.

Thanks Janet! It looks like everyone I know has other plans for supper tonight, so it's just me and my chickens. And I have a tiny roaster and only one chicken will fit in it
 I might put one in the fridge and make it tomorrow, unless I can somehow squeeze both in
