Some of my Thanksgiving recipes (things we have EVERY Thanksgiving).

Noodles (we ALWAYS have homemade noodles for Thanks and Christmas)
5 eggs
3/4 cup cream
1 & 1/2 tsp salt
3 tsp baking powder
pinch soda
enough flour for stiff dough (about 3 cups)

Work dough into ball, flatten and roll out flat. Then roll up (like a jelly roll) and cut small into 1/4 inch pieces. Unroll noodles, dry overnight. Drop into chichen broth. Simmer but do not cover. Cook about 30-45 mins, till noodles are tender and broth is reduced.

Cranberry Relish Salad
1 lb bag cranberries
2 oranges
1 box cherry jello (can use sugar free)
2 cups sugar (can use splenda)
1 cup diced apple
1 cup chopped pecans
Grind cranberries and oranges (I have an old fashioned grinder that screws onto the counter top - i'm sure a food processor would do just fine). Add sugar (or splenda) and let stand. Make jello and let almost set (I stick it in the freezer till almost set). Add to rest of ingrediants and chill. Make the day ahead, it gets better by the day.

Praline Yams
We use the recipe on the side of the Sugary Sam's canned sweet potatoes. Of course I don't have a can in the pantry to see the recipe, but I believe this is it:

1 (29 ounce) can Sugary Sam yams, drained
1/4 cup chopped pecans
1/4 cup coconut
1/4 cup firmly packed brown sugar
2 tablespoons flour
2 tablespoons butter or margarine, melted
Mix pecans, coconut, brown sugar, flour and melted butter. Pour over yams. Bake uncovered in preheated oven at 350 degrees F. I usually double this for our gang.

I make the standard pecan and pumpkin pies - but hubby always asks for a mincemeat pie. I make "mock mincemeat" and it is really good. The recipe is from the Joy of Cooking cookbook

Mock Mincemeat pie
Cut into pieces:
1 1/2 cup seeded raisins
Pare, core and chop:
4 medium tart apples
Combine the apples and raisins. Add:
grated rind of one orange
1/2 cup apple cider or other fruit juice
Cover all adn simmer until the apples are soft. Stir in the remaining ingredients until well blended:
3/4 cup sugar (can use splenda)
1/2 tsp each cinnamon and cloves
2-3 tablespoons finely crushed soda crackers (or flour)
Can add 1-2 TBS brandy (I don't add this)
Double pie crust.
Fill with mock mincemeat and place top crust on pie. Bake 450 for 10 minutes and 20 minutes longer at 350.
